[UITest] Investigate adding coordinate clicking to the Tap feature for catalyst #19754

Currently if you use the TapCoordinates(x,y) API you're met with the following exception
OpenQA.Selenium.WebDriverException : An unknown server-side error occurred while processing the command. Is there a way we can make this work on catalyst? It currently appears to work fine for all other platforms (including windows)
