Ingredients

  • One cup butter, softened
  • Half cup caster sugar
  • Two cups plain flour

Method

Preheat your oven to 165°C and line a 23cm square baking tin with foil, leaving some overhang on each side. In a bowl, mix the butter and sugar together until it takes on a sandy texture

Gradually add the flour, kneading the dough a few times until it becomes crumbly rather than smooth. Press the dough evenly into the bottom of the prepared tin and prick all over with a fork.


Pop the tin in the oven and bake until set, which should take around 45 minutes. While they're still warm, mark the surface with a knife.

After cooling, use the foil to lift the biscuits out and let them cool entirely on a wire rack. Once they're completely cooled, snap them apart along the marked lines.
