Sometimes, people prefer to eat food from food stalls instead of sitting in the
restaurant, give orders, and wait for food. In Pakistan, the business of mobile food is not in
trend as compared to other countries. We are successfully running “Zainar Cuisine” for
the last 5 years with a market value and taste. Now, we are introducing the concept of a
mobile food truck that will be delivered in different areas of Lahore. This is especially for
those people who cannot come to restaurants and this food truck will save their money and
time.
A mobile food truck will ready to enter for serving the food. For this, it is very important
to plan the production of the whole system. Where and how it will move towards its
customers and what will need.
The material that needed will, all related to prepare food, sitting arrangement, and for
movement of truck from differ places. These things will essential to reach on time on
destination and will provide a best quality food. A CEO will handle all the issues and
check and balance on every activity of every team member. Every member will put his/her
100% effort because Team work will be necessary enough to make a business successful.
The mission of Zainar Cuisine is to deliver quality food around the city with reasonable
prices. The main focus is to maintain core values. The goals and objectives of this
organization/business will, increasing revenue, generate sales; maintain a 20% margin,
increasing the menu per year. The salary of the staff will increase by 10% per year. Jobs
will available on the posts of CEO, General Manager, Project Manager, Finance Manager,
HR Manager, Marketing Manager, Logistic Manager, Chef, Bus boy/girl etc. All will be
selected on the bases of education in their specific field and on experience in their
respective field.
Most of the decision will take higher authorities and low level staff will have to follow that
rules so that a perfect meal will be served to customers. Zainar cuisine has strict rules and
regulations. The mobile trucks will have to reach its destination on time and employees
will have to come on time.
Our food trucks will be delivered to different locations in Lahore like Minar-e-
Pakistan, Lahore zoo, Muslim town, and Quaid-e-Azam industrial state. We will ensure
that we maintain food quality and taste. All ingredients we used will be fresh. Food will be
prepared on daily basis and some food will be prepared in the kitchen of the truck.
Management will make sure that everything is in the right amount and prepared in a good
way. When food trucks will go in different areas there will be one driver, one chef, and
one assistant for the chef. The chef will cook food instantly and the assistant will give it to
people. At the start, we have 3 employees for one truck but when our business grows up
we will hire more employees. The timing of the food truck will depend on the place. For
example on recreational sites like Minar-e-Pakistan and Lahore zoo, the timing for the
truck will more than industrial sites. We will also provide the menu according to the place.
In the industrial area employees like to eat desi food and in other places, we will provide
fast food along with desi food. Cold drinks, coffee, tea, and ice cream will be provided at
every site.
Our business will provide an alternative to food restaurants with a moving kitchen.
This business of food trucks will attract people and they will buy more things. We will try
to provide services in less time because to wait outside a food truck is more difficult than
in a restaurant. Our food truck will deliver to 4 locations at the start but with the time when

our business of food truck will grow up then we will launch our business in different areas
of Lahore and other big cities. But first, we have to provide customer satisfaction services
in Lahore.
When we start a new venture, there is a chance of occurrence of the risk. We will
think that what type of risks can occur in this business and then try to resolve these risks
before starting our business. Like if the truck is not on time at a specific location the
customer has to wait. If the taste and quality of food trucks will not the same as in the
restaurant, then people prefer to eat in the restaurant. It is very difficult to wait for food so
we try to give our services in very less time because if the timing will be increased people
will not buy food next time. All the risks that can occur in our business should be handled
in this way that minimizes risk and increases the cost. The management should have a
check on all the things and they will make sure that everything is well organized and the
chance of occurrence of risk should be minimal.
The owners are providing all of equity investment in the business in cash and goods. The
food cost is an average of 28.9% of the product pricing. Sales have been adjusted for
seasonality; including weather, holidays, and special events. Both of the owners will be
working on the truck full time in Year 1, with reduction in hours through years 2-5. A
commissary is required for daily operations. We will use professional resources in the
form of legal, accounting, and insurance advice.

Food truck industry generates more than $2 billion in annual sales. Traditional
restaurants experience 2% growth, while food trucks have experienced 7.3% growth
annually since 2007. That’s why Food trucks are trending internationally. So implementing
this idea in Pakistan have greater chances for success.
Industry sales over past 5 years
According to the responses to various surveys, over 85% of full-time food trucks generate
over $100,000 in annual gross revenue. Over half of the vendors that responded sold
$150,000 or more from their mobile food units last year.
Anticipated growth of industry
Since this lockdown, people are now hesitant in visiting restaurants, Moreover, food trucks
that are common in Europe have great liking in subcontinent region. Pakistani people are
always eager to follow European trends. So we are hoping good response for this industry
in Pakistan.
New firms entered past 3 years
In recent years, Eat me is a restaurant who introduced its food truck but it worked only for
establishment of the restaurant. They served few kinds of burgers but after 2 months, they
called their trucks off. The purpose behind these trucks was just to get noticed. Than
another mobile restaurant named Miju’s is a Chinese food serving food truck working in
Lahore. It is working currently but serves Chinese food only.

As we discussed above, Miju’s is the only food truck who is working in Lahore. So they
introduced only Chinese food product in food truck industry.

Nearest competitor in the industry is only Miju’s food truck.
How Your business is better?
Our business idea is better than our competitor Miju’s Food truck as they are serving only
Chinese food but we are offering many national and international cuisines along with fast
food item with unique option of customization in the recipe.
Sales trends of your competitor
Sales of Miju’s food truck increased during this pandemic. But it could be even more if it
served more options as lockdown pulled the nation toward food industry with rush as
people went bored of staying at home so they tried various food flavors to give them a
change.
Strength and weakness of your competitor
Our competitor Miju’s food truck has strength that they introduced the food truck idea for
the first time in Lahore so they have an advantage of being first and setting a benchmark
for other in food truck industry. The weakness it has is just that they offer only Chinese
food and have only a single truck.
Specific trends in your market area
The specific trend in our market area during lockdown is people want to try new taste of
food while staying safe that is not feasible in case of going to restaurants.
Customer profile
Our targeted customers will be mainly students, tourists and people living in the areas close to
zoo, Muslim Town, Quid e Azam Industrial zone and Azaadi chowk. It may include people who
love food and are always eager to try for something new.
Difference in customer profile from your competitors
Our customer profile is quite different from our competitor as they only target people of
Cantt Sadar who love Chinese food but we have number of locations and number of
national and international cuisines so we target more audience.

Description of Venture

Mission of Zainar Cuisine is to be mobile food truck business to bring smile and upscale
taste to the areas and streets of Lahore with high quality, fresh and nutritious ingredients
with reasonable price.
Reason for expanding Zainar Cuisine is to try out catering opportunities as an alternative
to this food industry. The food truck, being a moving kitchen can go everywhere, can
create fun environment and get more involved with customers. Moreover, this will add
another layer to our business.
Evolution from push carts to mobile trucks will definitely attract people. Food trucks can
experiment with food and location and can add different cultures and cuisines to allure
people. Food truck business require less investment but may likely to get more benefit as
they can easily change location and serve food.

We have bought all trucks along with cooking equipments, food prep equipments and
refrigeration equipments till now.
Customers usually hate to wait. That’s why; our pricing and our preparation time are our
biggest competitive benefits. Before service hours, all spreads and breads will be prepared,
so that customers have to wait less. Children are usually picky eaters. Our high quality
food along with captivating truck design will be appealing for them.
Our business trucks will be at Lahore Zoo, Minar-e-Pakistan, Muslim town and Quaid-e-
Azam Industrial estate. We will adjust scheduling according to demand, if needed.
We have purchased new trucks along with almost all equipments. Moreover, we still need
serving equipments and they will be purchased.
On recreational sites, we can find large amount of food traffic because people love to eat
food with outing. Similarly, on industrial area we can get large customer base during lunch
hours because food places are not common in industrial area.
We are already running a restaurant for 5 years and have good relations with customers,
suppliers, and many skilled chefs etc. But we need to hire assisting staff with experience in
food industry and still we need to do publicity of our food trucks.

Production Planning

In Pakistan and specially the people of Lahore are very fond of food. They are food lover
in a true manner. So, it is a best practice to provide a best quality food in affordable prices
in a unique way.
The uniqueness of our business is, it’s a mobile food truck that will give the food to the
customer according to their requirements.
The business plan idea we are taking is mobile food truck name as “ZAINAR CUISINE”.
The main purpose of “ZAINAR CUISINE” is to satisfy their customer by providing
delicious food
The objective of production planning is that the product should be produced by the best
and cheapest method and it should be of the required quality and produced at the right
time.
And it’s a dire need to implement this plan on ZAINAR CUISINE to make it according to
the customers need. Zainar Cuisine will provide delicious dealings.

It’s a complete manufacturing process. In this part of planning the steps that are involved:
Layout of the production
 A CEO will lead the organization/business, will there to handle issues and check out all
the team work.
 It’s a food truck containing all type of food varieties Desi+junk food with drinks.
 Sitting arrangement will also be provided to customers.
 Half cooked food will be taken and remaining will cooked on the demand of customers at
the spot.
 Food will be provided in both ways according to buyer’s need either in packed form or at
a sitting area of mobile truck.

Cost and Time:
A mobile food truck with all tools related to food, including masalas, pans, dishes and
everything needed for cooking of food.
In case of any strike, the alternative way can be choose. So, extra petrol/Diesel will be
there.
In case of tire puncture, the situation will be some critic and there will be chances of not
reaching at time on destination. So, apparatus will be there to sort out.

 Packing materials for those who want to pack food.
 All types of tools and extra tires will be in truck in case of any emergency like tire
puncturing.

 CEO will give the direction of work, give the responsibility to all the members and will
check out their working. He will make sure that all the goals achieved on time.
 Finance Manager will handle all the issues related to cost on all the materials required
 Managers will pay their own role.
 3 team members manager, chef, and assistant will go with truck and will provide a
quality food.

Future Goals:
By seeing the improvement and successfulness of ZAINAR CUISINE, we will develop
our business all over the Pakistan. And will make our customer delightful by providing
their favorite foods.

Operational Plan

Usually people love to stop at food places where they offer good-quality food along with
reasonable prices. In Pakistan, there are many food businesses but our mobile food truck
will provide you delicious cuisine in your area. That’s why, Operational efficiency is very
essential and important for our business “Zainar Cuisine”.
Customers will love our simple and delicious menu which is composed of fresh ingredients
but what makes our business so unique is moving truck with diversity of our menu fast
food along with desi tarka delivered in speedy manner. Our customers will have the
opportunity to either purchase packed foods or we will prepare their order according to
their demand whilst they wait.
Fresh food ingredients will be purchased and fresh food will be prepared daily. Although
there will be mobile food trucks but we have our supply storage with our restaurant for our
facility in Lahore. Inventory management will make sure that right amount of ingredients
is available and there’s little excess. Prepping the truck will start at 10am.

The ingredients will be supplied by the following suppliers:
 Bread, Buns and pita bread will be picked from a local bakery on daily basis.

supply chicken to our restaurant too.
 Supplier of fruits and vegies of our restaurant Vegetables and Fruit Market Singhpura
Lahore will supply for truck too on daily basis.
 Drinks and other ingredients will be picked from restaurant’s inventory.
 Sauces will be prepared at the truck kitchenette.

Three workers (chef, assistant, and driver) will provide services on each truck like taking
orders, preparing the order, packaging and collecting payment etc. The chef will be
responsible for cooking; frying and preparing food. Assistant will be responsible for taking
orders, collecting payment and serving food. We will hire workers(drivers) who have
driving license. We will make sure that all employees will have NIC (National Identity
Card). We will get licenses and registrations for our business. Food trucks will be
registered. We will get food safety permit.
Order will be served in very short time. Orders will be prepared, served and sold at
affordable and satisfactory price in a hygienic environment. Cleaning will be done on daily
basis at the end of shift. Trash cans with lids and trash bags will be used on site. Trash will
be removed at end of shift. Trucks will be maintained by Fazl e Rasheed and company
Lahore. But severe weather conditions can affect our business so to overcome that we will
make backup plans.

Initially, our food trucks will be at these locations but If demand outpaces supply, we plan
to open more food trucks. We will send our trucks to special events like music festivals,
film festivals, food festivals etc. Customers will be able to book our food trucks for events
like Birthday parties, office parties, get together etc. Moreover, customers will have
opportunity to book our food trucks with customized food.
Assumptions for the first year are that there will be three workers in each food truck to
manage and carry out operations. As demand increases, we will purchase more food
trucks. And we will hire more assistants to support the chef, if required. We will update
and change our menu according to demand of potential customers.

Marketing Plan

Executive Summary

Lahore is a city of lively people known for their love for food. If we look around, we can find
hundreds to thousands of food ventures and restaurants.

But these ventures and restaurants occupy only some part of the city, say central city.. we can
find quality serving restaurants in common food streets and some famous markets and malls.

People from corners of Lahore have to come to this far to enjoy food of these resturents. So we
are going to introduce our Food trucks in the city.

These trucks are sort of mini restaurants, serving our dishes to the areas far from the restaurants.
These trucks will keep moving from place to place so that we can serve of taste to our locals.

All the fast food items, Lahori cuisines, Chinese and Italian dishes along with continental
signature dishes will be served. We would also provide our customers with customization option
in our fast food menu. If they want something unusual in their recipe, they can ask for it but the
taste of resulting product will be responsibility of the customer. All these items will be cooked in
the kitchen of these trucks. These trucks will stay for some hours at a place and then move on.

Vision and Mission Statements

Vision: our vision is that quality and tasteful food is the right of every citizen. The people living
in areas far from the restaurants or in slam areas should also be provided with the chance to
enjoy restaurant dishes with reasonable prices.

Mission: our mission is to bring our restaurant taste to local residents of Lahore so that one
should not need to travel long to enjoy their favorite dishes.

Research and Analysis

We have researched that more than 70% of Lahori families do not go to restaurants but they do
not afford to reach the restaurants with their families and enjoy their food. That is the reason
behind success of Food panda company that delivers restaurants to homes. We have also
analyzed people liking for mobile restaurants they have seen in Europe through TV and internet.

Competition

Mijju’s Food truck is a mobile restaurant that is serving Chinese food in trucks. It is not a stationary
building but is always found in cantt area Lahore. So if you want to eat their food, you need to go to
cantt like any other restaurant but now they have started giving delivery services in some areas but
mainly you need to go cantt to get their services.

Competitive Advantage
So keeping in view the above competition analysis, our food trucks provide its customers
with a variety of dishes that ranges from fast food to national and some international
cuisines. Moreover, we offer customization for recipe in fast food mane up to some extent.

Strength: Our strength is our variety and quality of food serving at local streets and roads with a bit
customization option offering.

Our core values include our purpose on which our restaurant is built on, focus on growth
that is essential, integrity, leadership, professionalism, excellence and honesty. Our focus
is to maintain these values and represent these values through our work in each serving.

Tasks and functions:


As our restaurant is currently running in a very good state and have a well-known status
among people who prefer fine dining but we are extending our legacy by introducing food
trucks which will roam in different parts of the city to sell food so local people who have
no time to go to a restaurant or do not prefer spending too much amount of money on food
at their daily routine places. The food truck will go to an industrial area, two recreational
sites and one university site to capture most of the public of Lahore.
Our tasks and function includes making quality food beforehand that can be sell in trucks
and be able to present and serve the food to the customers in good manner. It is important
to open our food ruck on time because the places we have chosen are very critical.
Managing the budget and working on our purposed plan to grow is also one of them.

Rewards:
The salary of the staff will be increased by 10% by the end of the year if the said targets
will be achieved. There will be a weekly public praise for employees who are doing great
job to keep their as well as other employees’ spirits high.

CEO:
Office work starts at 8 AM sharp and has to remain in the office till the restaurant closes.
Roles and responsibilities:
CEO is responsible to provide the marketing directions, manages all the operations and
makes sure that all the goals are achieved in the required period of time. Managing the
communication, decision-making, problem solving, management and leadership are also
included in CEO’s responsibilities. He or she will be responsible to monitor the general
manager who will report the CEO about the progress of the food truck business as well as

and the truck. The manager of restaurant and the truck will have to follow his/her
directions or will tend to him/her for decisions etc.

Finance Manager:

on probation, salary will be Rs. 60, 000 but after that it will be increased to Rs. 70,000.

The lead chef will control and direct other chefs for the food preparation process and will
approve and polish the food after it is finished. The lead chef will manage and work
closely with the chefs of all levels and will create schedules, menu and recipes for them
and will ensure the quality of the food. He/she will also make decisions about stocks,
inventories and orders.

Assistant Chef:
He/she is supposed to be at the office at 8AM and have to fulfil 7 hours of job per day.
Salary will be Rs. 300 per hour. Salary will keep increasing on the basis of performance
and experience. There will be strict dress code in working hours.

customers will order from there.)
Wait staff:
Wait staff will take orders from customers, recommend them dishes according to their
tastes, deliver the food to them and receive payment from them.

Bus boy/girl:

AM and employees are expected to show up on time otherwise there will be 200 rupees’
deduction from the salary. The food trucks are supposed to leave the site on time too and
arrive at the selling point on time. Food items are supposed to be prepared and serve on
time with quality being the main focus. Formal dress code is to be followed.

RISK ASSESSMENT PLAN

Risk is very important factor while starting any type of business. We should identify the
risk at the time of start of business that which type of risk can occur and if risk become
reality then what happen to our business and solve all type of risks that you think can occur
when we start business. Major risks in new venture occur due to poor management or
weakness in marketing and production plan so try to keep all aspects in our business plan.
Step 01: IDENTIFYING THE RISK
We have to deliver fast food trucks in different areas of Lahore so that the people who
can’t come to the restaurant can enjoy food at their areas. This will reduce their time and
cost to come in restaurant. Much type of risks can occur in this plan due to poor
management so try to manage all things in proper way and try to minimize the risk. Then
assume that which type of risks can occur in our business plan.
Risk can occur if:
 we deliver food trucks daily in specific area
 If we deliver our food in an area where people don’t eat fast food
 If we deliver food in large quantity
 If the food delivered is not fresh

Step 02: If risk become reality:


After identifying the risks we will check what might be happen if risks become reality and
what problems we have to faced when we start a new venture
If we deliver food in specific area on daily basis then people will lose interest. If our foods
trucks delivered in an area where people have not so much interest in eating fast food then
our sale will be reduced. Food is delivered in large quantity but people don’t buy it due to
some reasons for example quality, taste etc. than our profit will reduce. If prices were too
much higher than restaurant than people prefer to dine in at restaurant. We should take
only delivery charges that must be apply. Try to deliver food trucks in an areas where
selling is high.
Timing is also an important factor in it. People usually prefer to eat fast food in lunch or
dinner. If we deliver the fast food in early morning customer will not buy it. It also matters
that for how much time food truck will be available in an area. Truck timing will be 12 pm
to 5 pm in industrial areas and in recreational sites timing should be 12 pm to 6 pm.
Step 03: Handling the risk:
We should make a new strategy in this way that will prevent, minimize or respond the risk
that should occur. Solve these risks at the time of startup.
We will try to deliver food trucks where population is high like near a university in
Faisalabad or near the factories or offices. We will deliver fast food near universities or
colleges because students like to eat fast food and desi food near factories because
employees don’t eat fast food with so much interest. In the time of evening truck will
deliver near parks and other picnic points.
Food trucks will be delivered 2 or 3 days in a week in specific area. If we will deliver same
food daily outside university then students will lose interest in this food. If possible we
will try to go inside university and parks. Truck should be on time on the specific location.
Coffee and tea should be made when a customer orders. There should be a small fridge in
truck for ice cream and cold drinks. Make sure that food delivered has same taste as in
restaurant. In industrial areas, employees like to eat desi food and the food should be of
low prices in industrial area. Customer satisfaction is most important for us so try to satisfy
the customer in each way.

The owners are providing all of equity investment in the business in cash and goods. The food
cost is an average of 28.9% of the product pricing. Sales have been adjusted for seasonality;
including weather, holidays, and special events. Both of the owners will be working on the truck
full time in Year 1, with reduction in hours through years 2-5. A commissary is required for daily
operations. We will use professional resources in the form of legal, accounting, and insurance
advice.
